Taste: Dry, with pleasant acidity. Persistent, balanced, with a long vanilla, pear and slightly bitter liquorice aftertaste. What to serve with: Fatty and spicy dishes, fish, shellfish, salmon or sushi. It goes well with Italian salami and bacon.
