This Bordeaux blend is completed with the add of Sangiovese, that give structure and acidity to make a great, affordable and versatile Supertuscan. Small berries with an incredibly smooth finish – this is a true winner to match with red meat and traditional pastas with meaty sauces like tagliatelle or lasagne. The grapes are harvested by hand and placed in bins to be transported to the cellar. After careful selection, they are de-stemmed and crushed. A 13/15 day maceration follows, depending on the vintage, with frequent pumping over at a temperature of 28 ° C. The malolactic fermentation takes place in cement tanks. It is partially refined in second passage barriques followed by a further 3 months aging in bottle.
